Multi Berry Oat Muffins

Makes 24

Preheat oven to 350 degrees

Dry Ingredients:

2 cups whole wheat flour
2 cups white flour
1 3/4 cups whole oats
1 cup granulated sugar
3 tsp baking powder
2 tsp baking soda
1 tsp salt
1 3/4 tsp xanthan gum
1-2 handfuls dark chocolate chip

Wet Ingredients:

2 cups water mixed with about 1/3 can frozen orange juice
1 cup sunflower oil
3 tsp vanilla extract
2 tsp almond extract
Mixture of frozen berries, total amount somewhere around 2 cups (cranberries, blueberries, raspberries)

Line muffin tins with parchment paper muffin cups

Combine dry ingredients in a large bowl, whisking together until well mixed.

Combine water, juice, oil, and the extracts in a large glass measuring cup / bowl.  Pour over dry ingredients and gently stir to combine.  Before thoroughly combined, add in the berries and mix until well blended.

Spoon into muffin cups

Bake 25-30 minutes, allow to cool on cooling rack.
