Raw Vegan Fudge Brownies


This recipe came to me via a friend, who also came by it via a friend.  This has got to be the ultimate healthy snack that is actually good for you!  The key is to make sure you are either using dates that are quite soft (not the dried up baking dates sold in cheap bulk bins or packages), or if you are using really dry dates, soak them in a small amount of water for about an hour to soften them up.  This will dispel the need for you to fight with your food processor, especially for the frosting stage.

ingredients for base:

  • 1 cup buckwheat groats (or kasha), soaked for at least 30 minutes in any amount of water
  • 1 cup dates
  • 1/2 cup shredded, unsweetened coconut
  • 1/2 cup unsweetened cocoa powder
  • cinnamon to taste if desired, up to 1 tsp
ingredients for frosting:
  • 1/2 cup dates
  • 1/2 cup cocoa powder
  • 1/2 cup water (add more during processing if frosting is too dry)
  • cinnamon to taste if desired

method:

After the buckwheat groats have soaked for at least half an hour, strain them and add to a food processor.  Add remaining ingredients for base and mix until well blended.  Press into a dish - I use a medium size corningware baking dish.  Set aside.

Add all the ingredients for the icing into the food processor and mix until very smooth.  Spread over base and refrigerate for at least 2 hours before serving.  Keep leftovers in the fridge.



Outrageously Awesome Oatmeal Chocolate Chip Cookies


The title says it all! These are "the" perfect oatmeal chocolate chip cookie, and of course the recipe can be adapted to really contain any kind of goodies.  Substitute or add raisins, walnuts, dried apricot, you name it.  If adding to the choco chips, you'll have to reduce their amount a bit.

Yields: about 2 dozen

ingredients:

  • 1 cup whole wheat flour
  • 1 cup rolled oats; quick or whole
  • 1 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup water
  • 1/4 cup light oil (I use sunflower)
  • 1 1/2 tsp vanilla extract
  • 1/2 cup vegan chocolate chips
  • 1/3 cup of something else; raisins, chopped walnuts, dried apricots, etc.
method:

Preheat oven to 350 degrees

Prepare several cookie sheets, I like to cover them with parchment paper.

In a large bowl combine the flour, oats, sugar, baking powder and salt and whisk together to mix.

In a small bowl combine the water, oil and vanilla extract, stir well to combine.

Pour liquid ingredients over dry, mix well to form a stiff dough.  Add in chocolate chips and other goodies.

Drop tablespoon sized balls of the dough onto your prepared cookie sheet, about 2" apart.  Bake 15 minutes, or until the bottoms are lightly browned.  

Remove from oven, but let cookies cool on pan for at least 5 minutes before transferring to cooling rack.

Watch them magically disappear!



chocolate mousse


ingredients:
  • 1 package silken tofu (about 300 grams)
  • 1/2 cup soy milk (vanilla, chocolate or plain)
  • 2 Tbsp cocoa powder
  • 5 oz. non-dairy chocolate chunks (about 1 cup)**
**most dark chocolate is non-dairy

method:

Blend together tofu, soy milk and cocoa powder in a blender.

Melt chocolate in a double boiler. Once melted, quickly pour into blender and blend until mixed completely.

Pour into serving dish (or several small dishes) and chill in fridge.

chocolate almond cookies















These are what angels eat in heaven...all...day...long

dry
:
  • 3/4 cup flour
  • 1/4 cup cocoa powder
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/3 cup chopped toasted almonds
  • 1/2 cup chocolate chips
wet:
  • 1/4 cup sunflower oil
  • 1/3 cup maple syrup
  • 1/4 cup sugar
  • 1 tsp. vanilla or almond extract
method:

Preheat oven to 350.

Chop whole almonds, then measure off 1/3 cup, then toast for no more than 10 min.

In a large bowl combine all dry ingredients.

In a smaller bowl whisk together wet ingredients until well blended.

Pour wet mixture into dry and stir until combined. The batter will be thick, and it will seem as though there are too many chocolate chips for the amount of dough. (I know, you ask, how can this possibly be?)

Roll dough into little balls between your hands and flatten into thick disks on a parchment lined baking sheet.

Bake 11 min for crisp cookies, 10 min. for slightly softer cookies.

Cool on wire rack.

Try not to eat them all in one day.
