Nice and simple - can't go wrong...
- Judge the amount of yams or sweet potatoes you have on hand
- Chop them into roughly large, 1" sized cubes
- Decide how much tofu (firm works better than soft) you want to use
- Cube the tofu into a desired size
- Select a casserole dish that will fit the root veggies, plus the tofu, when chopped
- Place the veggies & tofu in the dish
- Drizzle with olive oil
- Sprinkle with salt
- Sprinkle copious amounts of good quality powdered ginger overtop
- Cover with a lid
- Bake at 400 for 30 minutes
